
Let me start off by saying that I don’t like eggs. 🙂 At least, I don’t like eggs on their own. (scrambled, over easy…etc) But I know they’re good for me so I’ve been trying over the last year or so, to eat more. One way that I have actually been enjoying eating more eggs is by making egg salad sandwiches, or in my case, I prefer bunwiches!
Here’s my super simple three ingredient recipe:
Serves 1
- 1 hard boiled egg (good instructions on how to boil an egg can be found here)
- Mayonnaise (I use quite a bit because I want to disguise the taste of the egg 🙂 about 2 Tbsp?)
- a squirt of mustard (optional)
Once the egg is boiled, I smash it with a fork, then add the mayonnaise and mustard. Stir until it’s all well incorporated.
Serve on a bun or sandwich bread if you prefer! Serve with pickles. (Pickles made everything better, in my opinion!) One day, I might get adventurous and add some dill or something!

If one wants to cut down on mayo and can find good pricing on avocados, adding little bit of that good fat makes a nice addition to egg salad and adds to the creaminess. Greek yogurt can also work as well as a mayo sub, or a mixture of any of these 3 together. Chopped celery and onion (regular or green onion) are a must for me for some crunch (and a little bit of dried dill, chopped pickles or dill pickle relish for dill lovers) are nice too. I adore egg salad on fresh, buttered bread or buns with a lettuce leaf topping. I like it so much, I’ll hard boil about 6-8 eggs for the 2 of us. If it lasts, it’s even better after letting the flavours meld in the refrigerator for awhile.
I love egg salad sandwiches but they are the yummiest with alph alpha sprouts on them. A nice layer of them in place of lettuce. So good….you must try. And if you like the taste of sprouts it will do a great job of hiding the egg taste for you.
I try to eat whole grains. I would rather have the processed white bread with a ton of butter, but instead I make an effort to buy bread “substance”. *sigh*
Way to go! I’m not much of a bread eater myself, but I actually do prefer more whole grain breads because of the fact that there is more substance! 🙂
